How to make blinis

 

  • 75 g plain flour
  • 1 tsp baking powder
  • 2 eggs
  • 1 pinches salt
  • about 100 ml milk
  • 30 g unsalted butter

1. In a small bowl, whisk together the flour, baking powder, eggs, salt and enough of the milk to make a thick batter.

2. Melt the butter in a small frying pan over a low-medium heat.

3. Drop teaspoons of the batter into the pan, leaving space between each one to allow them to spread.

4. Cook for 1-2 minutes on each side or until cooked through and golden. Remove from the pan and drain on kitchen paper or paper towel. Repeat the process until all the batter is used up then set aside to cool.

5. To serve, stir the chives into the crème fraîche and spread a little of the mixture onto each blini. Top with accoutrements such as chopped egg, red onion and chives.
