Sunshine Coast Sturgeon

Serves 6

1. Roasted Sturgeon 1 Lb
2. Chopped scallions 2 ea
3 .Small dice of red peppers 1 ea
4. Mayo 3/4 cup
5. Shredded asiago 1/2 cup
6. Finely chopped parsley 1/4 cup
7. Lemon juice 2 Tbs
8. Oyster sauce 1 Tbs
9. Truffle oil 1 tsp
10. Salt TT
11. Pepper TT
12. Toasted and Buttered Kaiser bun 6 ea
13. Sliced jalepeño jack cheese 6 ea

- Turn oven to 375 F
- Score and season sturgeon fillet with olive oil and salt and pepper.
- Roasted sturgeon for aprrox 12-15 min; until JUST cooked.
- Let stand aside and when cool enough, transfer to fridge to fully cool.
- In an appropriate sized bowl, combine ingredients 2-11.
-Once sturgeon is cool, with latex/nitrile gloves on flake meat into mixing bowl
with rest of ingredients.
-Toast and butter Kaiser bun
-Place a dollop of sturgeon salad mixture onto bun.
-Place onto lined sheet pan.
-Place cheese slice on top and lightly brown cheese in oven.
